Rocky Road Bark is by far my favorite recipe of all time for Christmas and it takes all of five minutes! And it’s so creamy, it literally melts in your mouth.
I make Rocky Road Bark with good intentions of giving it away. It must be chopped up and delivered right away, or the temptation is too great and I will eat it. Lots of it.
And this is THE recipe everyone asks if I will deliver more!
Rocky Road Bark:
- 1 package of chocolate almond bark – our store ran out of milk chocolate so this time we used white chocolate for the first time. Still wonderful.
- 2 cups Peanut butter
- 3 cups rice Krispies – don’t buy generic, they do not taste the same
- 1/2 pkg of mini marshmallows
Melt the entire package of almond bark according to directions. Stir in peanut butter until completely melted and combined. Stir in rice Krispies and mini marshmallows, coating evenly. Pour into parchment covered 9×13 pan. You can butter the pan but this stuff is hard to get out. Allow to completely set up. We always put our pan in the freezer to quick set. Cut into pieces and deliver to your friends!

I made these today with one change – I put in 2 cups Rice Krispies and added one cup trail mix and an extra large handful of peanuts. We’re a sweet-salty family and these are amazingly good and simple. Thanks for sharing this recipe!
